做法:春(chūn )笋切成片后加少许盐(yán )捞出后用清(qīng )水(shuǐ )浸泡,生姜切片,葱切成段。锅烧(shāo )热,倒入2勺油(yóu ),放入生姜、春笋、牛肉片、葱段翻炒1分钟(zhōng )左(zuǒ )右。再加入生抽、老抽、蚝油(yóu )翻炒均匀,加入少(shǎo )量清水半掩(yǎn )住春笋,盖(gài )上(shàng )锅盖大火煮开后转中火。煮到水快(kuài )熬干的时候加(jiā )入盐,翻(fān )炒均匀稍收汁时盖上锅(guō )盖焖(mèn )。 -
