做(zuò )法:春笋切成片后加少(shǎo )许(xǔ )盐(yán )捞出后(hòu )用(yòng )清水浸泡,生姜切片,葱切成段。锅烧热,倒入2勺油,放入(rù )生姜、春笋、牛肉片、葱段翻(fān )炒1分钟左右。再加入生(shēng )抽、老抽、蚝(háo )油翻炒均匀,加入少量清水半掩住春笋,盖(gài )上锅盖(gài )大火煮(zhǔ )开后转中(zhōng )火(huǒ )。煮到(dào )水快熬干的时候加入盐,翻炒(chǎo )均匀(yún )稍收(shōu )汁(zhī )时盖(gài )上锅盖焖。 -
