做法:洗(xǐ )净宰好鲫鱼,洗净淮(huái )山和(hé )薏(yì )米(mǐ )。用清水把陈皮泡软,拍裂一小块姜,热(rè )锅,用姜块在锅上(shàng )擦(cā )一遍,放两勺油,待油六成热下(xià )鱼,煎(jiān )至微黄。煮沸瓦煲里的清水,放入煎煮好(hǎo )的鲫(jì )鱼和其他(tā )材(cái )料,武火煮沸,转中(zhōng )小火煲一个半小时,下(xià )盐调味即可品尝。 -
