做(zuò )法:洗净宰(zǎi )好鲫鱼,洗(xǐ )净淮山和薏(yì )米。用清水把陈皮泡软(ruǎn ),拍裂一小块姜,热(rè )锅,用姜块在锅上擦一(yī )遍,放两勺油,待油六成热下鱼,煎(jiān )至微黄。煮沸瓦(wǎ )煲(bāo )里的清水,放入煎煮好的鲫鱼和(hé )其他材(cái )料,武火煮沸,转(zhuǎn )中小火煲一个半(bàn )小时,下(xià )盐(yán )调味即可(kě )品尝。 -
