做法:洗(xǐ )净宰好鲫鱼,洗净淮山和薏米。用清水把陈(chén )皮泡软,拍裂一小(xiǎo )块(kuài )姜,热锅,用姜块在锅上(shàng )擦一遍(biàn ),放(fàng )两勺油,待油六成(chéng )热下鱼(yú ),煎至微(wēi )黄。煮沸瓦煲里的清(qīng )水(shuǐ ),放入煎煮(zhǔ )好的鲫鱼和(hé )其他材料,武火(huǒ )煮沸,转中(zhōng )小火煲一个半(bàn )小时,下盐调味即可品尝。 -
